Homemade Almond Butter

Super easy to prepare, this almond butter will not be staying for long in your fridge - add it to your smoothie for extra creaminess, on your toast along with some apple butter, use it to make hot cocoa, or simply eat it straight from the jar by the spoon-full - just be advised, this will ruin for you any store-bought brand!

And now a quick note on the nutritional benefits of almonds:

Raw almonds are high in monounsaturated fats, fiber, protein and important nutrients. They are also loaded with antioxidants, high in vitamin E and magnesium, and can assist with blood sugar control. Snacking on almonds will leave you feeling full longer because of their high fiber and protein content, which can result in eating less overall {resource}.

We are slightly roasting the almonds in this case, so it is only natural that some antioxidants and vitamins will be affected in the process, but it is still among the best snack options out there.

preparation details

I find it easiest to roast the almonds the night before, so they have time to cool completely - usually if I am using the oven to roast something, I would throw them in there as well (saves on electricity ;)). Something to keep in mind is that you need a powerful food processor for this or the motor might struggle, since you are processing them for 10 min.

As for the preparation itself, the food processor is doing all of the heavy lifting, so you can sit back and relax! It is good to scrape the sides down on the 5 min. mark, but other than that you are not doing anything else. At the 10 min. mark you will have a smooth and creamy almond butter for you to enjoy in various ways!

Transfer to a glass jar and keep in the fridge for up to a week, but I doubt that it will last that long.

Some delicious ways to enjoy your freshly-made almond butter:

  • add a tablespoon to your morning smoothie for extra creaminess - like in this Persimmon Breakfast Smoothie

  • add it to apple or banana slices along with a sprinkle of cinnamon to create a delicious snack

  • add it to a piece of toasted bread with some apple butter

  • smear it on top of muffins to make them extra special - such as these Apple Raisin Muffins

  • eat it straight from the jar (maybe the least desirable option, but if it happens so be it!)

Products:

  • 400g raw almonds

  • 1/2 tsp salt

Method:

  1. Pre-heat oven to 350F/ 180C.

  2. Place almonds in a baking tray and roast for 10-15 min., stirring halfway through. Set aside and let cool completely.

  3. Place the roasted almonds and salt into a food processor and process for 5 min., scrape down the sides and process for another 5 min. until you have a creamy almond butter.

  4. Transfer the almond butter to a glass jar and store in the fridge for 1 week.
