The slightly spicy, slightly tangy and very oniony sauce is the perfect companion to anything from grilled vegetables to baked savory bites.

Originally, the chimichurri sauce comes from Argentina, but no one is certain where the actual name comes from. Typically used for grilled meat, the sauce has started gaining popularity among the meatless dishes as well. Traditionally, the sauce contains finely diced parsley, garlic, oregano and vinegar, but there are variations throughout different countries in South America.

This recipe here is my own interpretation of the sauce, where I have added a few things for an extra zing!

  • parsley

  • coriander

  • garlic

  • red onion

  • apple cider vinegar

  • olive oil

  • spices

Chimichurri Sauce

Method:

  1. Dice all of the ingredients finely, place in a bowl and stir well.

    * You can also process the ingredients in a food processor, but it will end up looking more like a pesto.

  2. It keeps in the fridge for up to three days.

Ingredients:

  • 1/2 bunch parsley

  • a handful of cilantro

  • 1/4 large red onion (or 1 small one)

  • 1 garlic clove

  • 1 Tbsp dried oregano

  • 1 tsp cumin powder

  • 1/2 tsp red pepper flakes (or more if you like it spicier)

  • 1/4 cup olive oil

  • 2 Tbsp apple cider vinegar

  • 1/4 tsp sea salt
