Baked Sweet Potato Fries

This dish is easy to prepare and even easier to enjoy! I like to have them as a snack, as an appetizer with a side of guacamole, sun-dried tomato hummus or homemade ketchup, or alongside my favorite sandwiches and veggie burgers.

Sweet Potatoes are sweet and starchy root vegetables, which are extremely versatile and possess high nutritional value - rich in fiber, vitamins, and minerals, such as potassium, which every cell in our body requires to function. In addition, they are also a valuable medicinal plant having anti-cancer, antidiabetic, and anti-inflammatory activities. Sweet potatoes are among the healthiest and cheapest, with one of the highest nutrient-rich food scores per dollar (source and source).

One thing I found out when reading up on the nutritional wonders of sweet potatoes is that the skin has nearly ten times the antioxidant power as the inner flesh, which means that from now on I will most likely skip the peeling step (making this recipe even easier to make)!

It is important to cut the fries into uniform sizes, so they bake evenly. If you have too many uneven pieces, the smaller/ thinner ones will char more than the others and may become bitter.

Another point to remember is to use a large enough bowl (at least twice as big as the amount of fries) to comfortably mix your fries with the spices.

Make sure to mix your fries and spices well, so they are all evenly coated. There will be a good amount of spices on the bottom of your bowl, so be sure to scrape it and add to your baking tray … no spice left behind!

Baked Sweet Potato Fries

Ingredients:

  • 3 large sweet potatoes (or 4 smaller ones), peeled (optional) and cut into same-size sticks

  • 1 Tbsp olive oil

  • 2 Tbsp nutritional yeast

  • 1 Tbsp chickpea flour

  • 1 tsp garlic powder

  • 1/2 tsp curry powder

  • 1/2 tsp smoked paprika

  • 1/2 tsp sea salt

  • 1/4 tsp freshly ground black pepper

Method:

  1. Pre-heat oven to 425F fan and line a baking sheet with parchment paper.

  2. Place the cut sweet potatoes in a large bowl, add the olive oil and mix well. Add the rest of the ingredients and mix well until evenly coated.

  3. Transfer the sweet potatoes to a pre-lined baking sheet and spread them out so they don't touch (this helps get crispier fries, otherwise they would just steam and become soggy). Bake for 30 minutes, rotating the pan halfway through to ensure they are evenly baked. If you want them to be more on the darker side, leave them in the oven for a few more minutes, but be careful not to burn them.

  4. Serve immediately with some homemade ketchup or guacamole. They can be stored in the fridge for a couple of days, but will become softer.
